About Us

Dee’s One Smart Cookiellc is a bakery dedicated to creating fresh baked goods for
people living with sensitivities to wheat, gluten, dairy, soy, peanuts and many
other food allergens. Dee opened the doors of her gluten-free, dairy-free bakery in
Glastonbury, Connecticut, November of 2007.

Diane, “Dee”, Kittle was an accomplished pastry chef and sugar artist when she was
diagnosed with celiac disease, a severe auto-immune reaction to gluten. Realizing
that she could no longer work in conventional pastry arts, she took on the task of
developing a repertoire of delicious gluten and dairy free recipes. She emerged from
her kitchen ready to share her work with the gluten-free community.
